Easy, flavorful cornbread muffins with cornmeal, sour cream, corn, and Cheddar cheese.
Ingredients:
  • 1 cup milk
  • 0.5 cup sour cream
  • 0.25 cup butter, melted
  • 1 egg, lightly beaten
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 cup chopped whole kernel corn
  • 2 tablespoons white sugar
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C), then get those muffin cups greased up or lined with paper liners.
  • Combine milk, sour cream, butter, and egg in a large mixing bowl and beat until smooth. Add flour, cornmeal, chopped corn, sugar, baking powder, baking soda, and salt. Whisk until dry ingredients are just moistened, then gently fold in Cheddar cheese. Distribute batter evenly into 12 muffin cups.
  • Bake in the preheated oven for 15 to 18 minutes or until a toothpick inserted into the center comes out clean. Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
