Moist and sweet cornbread muffins made with Jiffy mix, honey, butter, and sour cream for a scrumptious treat.
Ingredients:
  • 2 large eggs
  • 2 (8.5 ounce) packages corn bread mix (such as Jiffy®)
  • 0.5 cup milk
  • 0.5 cup sour cream
  • 3 tablespoons honey
  • 2 tablespoons white sugar
  • 3 tablespoons melted butter
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a muffin tin with 12 paper liners.
  • In a large bowl, combine cornbread mix, milk, sour cream, eggs, and honey until smooth with a few lumps remaining. Let the batter rest for 5 minutes. Fill muffin cups 3/4 full and sprinkle lightly with sugar before baking.
  • Bake until golden brown in the preheated oven for 18 to 20 minutes.
  • Brush the tops generously with melted butter several times. Enjoy warm or at room temperature.
