Cheeky chilli-pepper chutney

Delicious sweet and spicy chilli chutney - ideal with cheese and meat.
Ingredients:
  • 810 fresh red chillies
  • 8 ripe red peppers
  • 2 red onions
  • 1 sprig of fresh rosemary
  • olive oil
  • 2 fresh bay leaves
  • 1 stick of cinnamon
  • 100 g brown sugar
  • 150 ml balsamic vinegar
Instructions:
  • Grill the chillies and peppers until blackened and blistered. Transfer them to a bowl covered with clingfilm to steam and cool. Peel off the skin, remove the seeds, and chop finely. Sauté the onions, rosemary, bay leaves, and cinnamon in oil until golden and sticky. Add the chopped peppers, chillies, sugar, and balsamic. Cook until thickened to a chutney consistency. Season to taste, remove cinnamon and bay leaves. Store the chutney in sterilized jars for long-term use or in the fridge for immediate enjoyment.
