Spicy cheese-stuffed chillies: the ultimate crowd-pleaser.
Ingredients:
  • 8 (about 215g) long fresh red chillies, halved lengthways
  • 100g fresh ricotta
  • 100g goat's cheese, at room temperature
  • 20.00 ml chopped fresh chives
  • 1 1/2 tsp finely grated lemon rind
  • 2.40 gm sea salt
  • Extra virgin olive oil, to serve dressing
  • 27.30 gm extra virgin olive oil
  • 20.00 ml white balsamic vinegar
  • 10.60 gm lemon juice
  • 1 garlic clove, thinly sliced
Instructions:
  • Preheat the oven to 190C. Scoop out and discard the seeds and membranes from the chilli halves.
  • In a bowl, mix ricotta, goat's cheese, chives, lemon rind, and salt. Add pepper, stirring until creamy. Fill the chili shells and level the tops. Place in a shallow baking dish.
  • Prepare the dressing by mixing oil, vinegar, lemon juice, and garlic in a bowl. Season with your favorite spices and pour over the chillies. Let it sit for 15 minutes to marinate and enhance the flavors.
  • Bake the chillies for 18-20 minutes until tender but still holding their shape. Allow them to cool for 5 minutes, then drizzle with oil.
