Create fruity Cheerios muffins for a convenient and healthy breakfast option!
Ingredients:
  • 2 cups Cheerios™ cereal
  • 3/4 cup Gold Medal™ all-purpose flour
  • 1/2 cup Gold Medal™ whole wheat flour
  • 1/3 cup packed brown sugar
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 cup mashed very ripe bananas (2 to 3 medium)
  • 2/3 cup buttermilk
  • 2 tablespoons canola oil
  • 2 egg whites
  • 1/2 cup raisins or sweetened dried cranberries
Instructions:
  • Preheat your oven to 400°F. Grease 12 regular-size muffin cups with cooking spray or grease the bottoms only. Place cereal in a food-storage plastic bag and gently crush with a rolling pin to make 1 1/2 cups.
  • Combine cereal, flours, brown sugar, baking powder, and baking soda in a large bowl. Gently fold in remaining ingredients until just moistened. Distribute batter evenly into muffin cups.
  • Bake for 18 to 22 minutes until golden brown, then let it rest in the pan for about 2 minutes before transferring to a cooling rack. Enjoy warm if preferred.
