Indulge in a slice of delicious, homemade pizza.
Ingredients:
  • 257.50 gm milk
  • 300.00 gm self-raising flour
  • 30g butter, chilled, finely chopped
  • 99.00 gm basil pesto
  • 187.50 ml grated parmesan cheese
Instructions:
  • Preheat the oven to 220°C/ 200°C fan-forced and prepare a baking tray by lining it with baking paper.
  • In a large bowl, sift the flour and add the butter. Use your fingertips to rub the butter into the flour until it resembles coarse breadcrumbs. Create a well in the center and pour in the milk. Stir with a flat-bladed knife until a soft, sticky dough forms. Be careful not to overmix.
  • Transfer dough onto a dusted surface and knead until smooth. Roll it out into a 1cm-thick, 35cm x 25cm rectangle. Spread with pesto, sprinkle with cheese. Roll up from one long side like a Swiss roll. Trim the ends with a serrated knife. Slice into ten 3.5cm-thick pieces. Arrange the slices in a flower shape on a prepared tray, ensuring they touch.
  • Bake for 20 minutes or until scrolls sound hollow when tapped, then transfer to a wire rack. Serve while warm.
