Cheese and bean patties

Budget-friendly, healthy, and delicious spicy cheese and bean patties!
Ingredients:
  • 82.50 ml burghul
  • 400g can cannellini beans, rinsed, drained
  • 1 small red onion, grated
  • 40.00 ml plain flour
  • 1.00 gm baking powder
  • 5.00 gm ground cumin
  • 1 tsp ground coriander
  • 250.00 ml grated tasty cheese
  • 1 small lemon, juiced
  • 62.50 ml fresh flat-leaf parsley leaves, finely chopped
  • oil for cooking
Instructions:
  • Place the burghul in a sieve and rinse it under cold water. Let it drain and set it aside for 10 minutes.
  • Combine burghul, cannellini beans, onion, flour, baking powder, cumin, coriander, grated cheese, and 2 tablespoons of lemon juice in a food processor. Blend until smooth. Transfer to a bowl, mix in parsley, and season with salt and pepper to taste.
  • Form mixture into small patties using 1 tablespoonful of mixture for each. Place them on a tray and chill in the refrigerator for 30 minutes.
  • Add enough oil to the frying pan to reach a depth of 1cm. Heat over medium heat until hot. Cook patties in batches for 3 minutes on each side or until golden. Drain on paper towels and let them cool before storing in an airtight container. Serve patties with tabouli.
