Cheese and jalapeno quesadillas

A tantalizing blend of three cheeses and fiery jalapenos for a burst of flavor.
Ingredients:
  • 100g manchego cheese (see note), grated
  • 100g munster cheese or other washed-rind cheese, finely chopped
  • 100g firm goat's cheese, chopped
  • 1 spring onion, very finely chopped
  • 1 tsp finely chopped green jalapeno chilli
  • 10 mini (13cm) flour tortillas
Instructions:
  • Mix cheeses, onion, and chili in a bowl. Spread about 1 tablespoon of the mixture over half of each tortilla. Fold the tortillas in half and press down firmly. Heat 1 tablespoon of oil in a frying pan over medium heat. Cook quesadillas in batches of 3 or 4 for 2 minutes per side, adding more oil for each batch. Serve quesadillas hot.
