Golden pastries filled with creamy goat's cheese and juicy tomatoes for a flavorful bite.
Ingredients:
  • Olive oil, for greasing
  • 2 sheets ready-rolled frozen puff pastry, partially thawed
  • 1 110g pkt goat's cheese
  • 40.40 gm sour light cream
  • 3 ripe tomatoes, cut into 5mm-thick slices
  • Salt & ground black pepper, to taste
Instructions:
  • Preheat your oven to 220°C, then generously oil a baking tray to prep it.
  • Layer one sheet of pastry on top of the other, gently sealing them together. Use a 7.5cm round pastry cutter to create 8 discs. Transfer the discs onto a greased tray and let sit for 5 minutes to thaw completely.
  • In a medium bowl, combine the goat's cheese and sour cream until smooth using a wooden spoon. Spread 3 teaspoons of the cheese mixture over each pastry round and top with 2 slices of tomato.
  • Bake the pastries in a hot oven for 18-20 minutes until they are crisp and golden brown. Serve two pastries on each plate, then drizzle with oil and sprinkle with salt and pepper to taste.
