Delicious puff pastries topped with caramelized onions, sun-dried tomatoes, and Camembert cheese.
Ingredients:
  • 1 sheet frozen puff pastry (from 17.3-ounce package), thawed
  • 2 tablespoons butter or margarine
  • 1 sweet onion, cut lengthwise into fourths and thinly sliced (2 1/2 cups)
  • 2 teaspoons packed brown sugar
  • 1/4 cup sun-dried tomatoes in oil and herbs, drained and finely chopped
  • 1 round (4 ounces) Camembert cheese, cut into 3/4x3/4x 1/4-inch pieces
Instructions:
  • 1. Preheat your oven to 400°F. 2. Grease 2 cookie sheets with cooking spray. 3. Lay out the pastry on a lightly floured surface and roll it into a 12-inch square, cutting off any uneven edges. 4. Cut the pastry into 36 (2-inch) squares by making 6 rows by 6 rows. 5. Transfer the squares to the prepared cookie sheets. 6. Bake for 12 to 15 minutes, rotating the cookie sheets halfway through, until the pastry is puffed and golden brown. 7. Transfer the squares to a wire rack to cool until slightly warm.
  • In an 8-inch skillet over medium heat, melt butter until sizzling. Sauté onions for 15-20 minutes until tender, stirring occasionally. Add brown sugar and cook until onions are coated. Mix in tomatoes, then remove from heat and keep warm.
  • Lay the cooled pastry squares on the baking sheets. Press a piece of cheese into the center of each pastry square, then fill with approximately 1 teaspoon of the onion mixture. Bake for about 1 minute until the cheese is melted.
