Hearty three-cheese manicotti baked in rich beefy tomato sauce for a delicious dinner.
Ingredients:
  • 1 pound ground beef
  • 1 small onion, diced
  • 1 teaspoon roasted garlic
  • 1 (28 ounce) can diced tomatoes with garlic and onion
  • 1 (12 ounce) can tomato paste
  • 1 tablespoon white sugar
  • 1.5 teaspoons salt
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon garlic salt
  • 1 (8 ounce) package manicotti shells
  • 1 (8 ounce) package shredded mozzarella cheese
  • 30 ounces cottage cheese
  • 0.25 cup grated Parmesan cheese
  • 1 egg, beaten
Instructions:
  • In a large skillet over medium-high heat, brown and crumble beef with onion and roasted garlic for 5 to 7 minutes. Let pan juices evaporate for another 10 minutes. Stir in diced tomatoes, tomato paste, sugar, salt, oregano, thyme, bay leaf, pepper, and garlic salt. Bring to a boil, then simmer on medium-low for 30 minutes to blend flavors.
  • Preheat your oven to 350°F (175°C).
  • Bring a large pot of salted water to a boil. Cook manicotti for 8 minutes until al dente. Drain and cool slightly.
  • Combine mozzarella cheese, cottage cheese, 1/4 cup Parmesan cheese, egg, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a bowl. Fill each manicotti shell generously with the cheese mixture.
  • Spread a generous layer of tomato-beef sauce to coat the bottom of a 9x13-inch baking dish. Place the stuffed manicotti on top of the sauce and then pour the rest of the sauce over the pasta. Cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes until bubbly. Sprinkle the remaining 1/4 cup of Parmesan cheese over the manicotti and bake for an additional 10 to 15 minutes until the cheese filling is melted.
