Cheesecake cherry truffles recipe

Delicious cherry cheesecake truffles - the perfect homemade gift!
Ingredients:
  • 40 cherries, pitted
  • 50g White Choc Buttons
  • ¼ cup (60g) ricotta
  • ¼ cup (25g) mascarpone
  • 150g Milk Choc Buttons
  • 150g Dark Choc Buttons
Instructions:
  • Gently dry the cherries with a paper towel and then place them on a baking tray lined with parchment paper.
  • Melt half of the white chocolate in a heatproof bowl placed over a saucepan of simmering water (without letting the bowl touch the water). Stir with a metal spoon until smooth. Let it cool for 10 minutes. Combine the melted white chocolate with ricotta and mascarpone in the bowl, whisk until smooth. Transfer the mixture to a piping bag fitted with a 5mm plain nozzle. Fill the cherries with the ricotta mixture using the piping bag. Place on the lined tray and freeze for 10 minutes.
  • Melt the milk chocolate in a clean heatproof bowl over simmering water, making sure the bowl doesn’t touch the water. Stir until smooth. Dip half of the truffles one at a time using 2 forks, shake off excess, and place them back on the tray. Then repeat the process with the dark chocolate and the rest of the truffles. Let them set for 30 mins before serving.
  • Melt the rest of the white chocolate in a heatproof bowl over simmering water, ensuring the bowl doesn't touch the water. Stir until smooth, then transfer to a sealable plastic bag. Cut a small hole in one corner and drizzle the chocolate over the truffles. Let sit for 10 minutes until the chocolate sets.
