Create portable strawberry cheesecake jars for a simple, delightful summer treat.
Ingredients:
  • 6 pecan shortbread cookies (such as Keebler® Sandies), finely crushed
  • 2 tablespoons butter, melted
  • 2 tablespoons white sugar
  • 6 (1/2 pint) canning jars with lids
  • 12 ounces sliced fresh strawberries
  • 1 (8 ounce) package cream cheese, softened
  • 2 tablespoons fresh lemon juice
  • 0.5 cup heavy cream, whipped
Instructions:
  • Combine cookie crumbs, butter, and 2 tablespoons sugar in a bowl, ensuring they are well mixed. Spoon about 3 1/2 tablespoons of the mixture into each jar, lightly pressing it into the bottoms without compacting it.
  • Slice 6 strawberries in half for an elegant garnish, then chop the remaining strawberries.
  • Using an electric mixer, blend cream cheese, 1/2 cup sugar, and lemon juice until smooth. Gently mix in whipped cream and chopped berries. Divide mixture evenly into jars (around 1/2 cup per jar). Garnish each jar with 2 berry halves, cover with lids, and refrigerate for at least 2 hours or up to 3 days.
