Indulgent lemon cheesecake squares: Sweet, tart lemon atop creamy cheesecake. Delightful!
Ingredients:
  • 0.5 cup confectioners' sugar
  • 0.75 cup unsalted butter, cut into cubes
  • 1.5 cups white sugar
  • 1 tablespoon all-purpose flour
  • 1 tablespoon lemon zest
  • 0.5 cup lemon juice
  • 2 (8 ounce) packages cream cheese, softened
  • 2 eggs, beaten
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly butter a 9x13-inch baking dish.
  • Combine 1 1/2 cups of flour and confectioners' sugar in a mixing bowl, then blend in cold butter until it looks like coarse crumbs. Press the mixture into the bottom and up the sides of the baking dish to create a crust.
  • Bake in the oven until beautifully golden, for about 15-18 minutes. Then, take it out of the oven and set it aside.
  • Combine 4 eggs, 1 1/2 cups sugar, 1 tablespoon flour, lemon zest, and lemon juice in a bowl. Pour the lemon mixture into the prepared crust and remove any bubbles from the surface. In another bowl, mix cream cheese and 1 cup sugar until smooth, then whisk in 2 eggs. Spread this mixture over the lemon layer. The layers will naturally separate when baked.
  • Place the dish in the preheated oven and bake for around 30 minutes until the filling is fully set.
