Lemon Cheesecake Bars

Delicious homemade lemon bars using a mix - irresistibly good!
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Lemon Cake Mix or 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1/4 cup butter or margarine, softened
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 2 teaspoons grated lemon peel
  • 2 tablespoons lemon juice
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pan). In a large bowl, use an electric mixer on low speed to combine dry cake mix, butter, and 1 egg until mixture is crumbly. Press mixture into the bottom of an ungreased 13x9-inch pan.
  • In a medium bowl, use an electric mixer to blend smooth cream cheese. Gradually mix in powdered sugar on low speed. Add lemon peel and juice until smooth. Set aside 1/2 cup and refrigerate. Incorporate 2 eggs into the remaining cream cheese mixture until blended. Spread over the cake mixture.
  • Bake for 23-28 minutes until firm. Cool for about 1 hour. Spread with cream cheese mixture and refrigerate for about 3 hours until firm. Slice into 48 bars and store covered in the refrigerator.
