Ingredients:
  • 0.25 cup onion, diced
  • 1 tablespoon bacon grease
  • 3 cups 1-inch potato chunks
  • 2 cups chicken broth
  • 1 cup water
  • 3 tablespoons flour
  • 1 cup milk
  • 3 ounces shredded Cheddar cheese
  • 1.5 cups shredded cooked chicken
Instructions:
  • In a stockpot over medium-high heat, sizzle bacon grease until fragrant. Add onions and saute until soft and translucent, approximately 4 minutes.
  • Combine potato chunks and onion, then pour in chicken broth and water. Bring to a boil and simmer until potatoes are tender but not mushy, approximately 15 minutes.
  • In a small saucepan over medium heat, melt butter. Add flour and cook, stirring constantly, for about 1 minute until fully moistened. Pour in milk while stirring; cook until thickened, about 3 minutes. Sprinkle cheese over the mixture and cook until melted and smooth, 2 to 3 minutes.
  • Combine the cheese mixture and cooked chicken into the flavorful liquid in the stockpot, heating until the chicken is warmed through, approximately 4 minutes.
