Creamy, cheesy one-pot potato leek soup made easy with store-bought chicken broth for ultimate comfort.
Ingredients:
  • 2 tablespoons butter, or more if needed
  • 2 leeks, cleaned and chopped
  • 0.5 cup chopped onion
  • 6 potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup half-and-half
  • 4 ounces shredded Cheddar cheese
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon garlic powder
Instructions:
  • In a pot over medium heat, melt butter until it sizzles gently. Sauté leeks and onion with care until they become tender and fragrant, approximately 5 minutes.
  • Combine the potatoes and chicken broth with the onion mixture, allowing the flavors to meld together beautifully as the potatoes become tender after simmering for 20 to 25 minutes.
  • Add the half-and-half to the potato soup and let it simmer for an additional 15 minutes until slightly thickened.
  • Combine Cheddar cheese, parsley, garlic powder, salt, and black pepper into the soup, stirring until the cheese is fully melted, which should take about 5 minutes.
