Satisfying and nutritious classic leek and potato soup, easy to make.
Ingredients:
  • 2 medium onions
  • 2 sticks of celery
  • 2 cloves of garlic
  • 400 g leeks
  • 400 g potatoes
  • 2 organic chicken or vegetable stock cubes
Instructions:
  • Prepare the vegetables: Trim and peel the celery, roughly chop the onions, and finely slice the garlic. Remove the ends of the leeks, quarter them lengthwise, wash under running water, and slice into 1cm pieces. Heat 2 tablespoons of oil in a large pan over high heat. Add all the chopped ingredients and cook uncovered for 10 minutes, stirring occasionally until softened. In the meantime, peel the potatoes and dice them into 1cm cubes. Dissolve the stock cubes in 1.8 liters of boiling water, then pour into the pan with vegetables. Add the potatoes. Bring to a boil, then simmer covered on low heat for 10 minutes. Remove from heat, season with salt and pepper, and blend until smooth using a stick blender or liquidizer. Serve and enjoy!
