Cheesy Cheddar and mushroom stuffed chicken breasts coated in crunchy cracker crumbs, baked to perfection.
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • 1 teaspoon butter
  • 1 (4.5 ounce) can sliced mushrooms, drained
  • 0.5 cup cheese-flavored crackers (such as Cheez-It Duoz Sharp Cheddar and Parmesan®), crushed
  • 1 (8 ounce) package cream cheese
  • 1.25 cups shredded Cheddar cheese, divided
  • 6 tablespoons grated Parmesan cheese
Instructions:
  • Preheat the oven to 375°F (190°C) and generously grease a 9x12-inch baking dish.
  • Place a chicken breast between two sheets of heavy plastic on a sturdy surface. Pound the chicken with a meat mallet until 1/4 inch thick. Repeat with remaining chicken breasts.
  • In a small skillet, gently melt the butter until sizzling, then sauté the mushrooms until golden brown, roughly 8 minutes. Set aside. In a shallow bowl, whisk the egg. In a separate shallow bowl, place the cracker crumbs.
  • Combine mushrooms, cream cheese, 1 cup of Cheddar cheese, and Parmesan in a bowl, then generously spread over the chicken. Roll up the chicken breasts, dip in beaten egg, coat with cracker crumbs, and place in a baking dish. Finish by sprinkling with the remaining 1/4 cup of Cheddar cheese before baking.
  • Bake in the oven until the chicken is fully cooked, the filling is melted, and the crumbs are golden brown, approximately 30 minutes or until a thermometer inserted into a roll reads 165°F (74°C).
