Cheesy chicken Lombardy: Deliciously easy dish served over rice, pasta, or mashed potatoes.
Ingredients:
  • 0.5 teaspoon garlic and herb seasoning blend (such as Mrs. Dash®)
  • 8 (4 ounce) boneless skinless chicken breast halves, pounded to 1/4-inch thickness
  • 6 tablespoons salted butter, or as needed
  • 1 cup sliced mushrooms
  • 0.5 cup Marsala wine
  • 0.33333334326744 cup chicken broth
  • 0.25 cup grated Parmesan cheese, or more to taste
  • 0.5 cup mozzarella cheese
Instructions:
  • Preheat your oven to a toasty 400 degrees Fahrenheit (200 degrees Celsius) and coat a 9x13-inch baking pan with a touch of grease.
  • Mix the flour and seasoning in a shallow bowl. Gently coat the chicken pieces in the seasoned flour.
  • In a large skillet over medium-low heat, melt 2 tablespoons of butter. Brown chicken breasts in batches, 4 pieces at a time, for 3 to 4 minutes on each side, adding more butter as necessary. Transfer the browned chicken to the prepared baking pan.
  • In the same skillet, melt the remaining 4 tablespoons of butter and saute the mushrooms until lightly browned for about 5 minutes. Evenly sprinkle the mushrooms over the chicken.
  • Deglaze the skillet by adding wine and chicken broth to the pan drippings, scraping up all the flavorful browned bits with a spoon. Bring the mixture to a boil, then simmer over low heat for 10 minutes. Finally, generously spoon the resulting sauce over the chicken.
  • Place in the hot oven for 10 minutes.
  • Take the chicken out of the oven. Mix Parmesan and mozzarella cheese in a bowl and sprinkle evenly over the chicken. Put it back in the oven and bake until the cheese is melted and the chicken is fully cooked, about 5 minutes. Make sure the internal temperature reaches 165 degrees F (74 degrees C).
