Cheese and brown sugar-baked bacon sauce over tender chicken and mushrooms in a delightful Chicken Lombardy dish adored by all.
Ingredients:
  • 1 (8 ounce) package applewood smoked bacon
  • 0.25 cup brown sugar
  • 1 (8 ounce) package sliced fresh mushrooms
  • 2 tablespoons butter, melted
  • 6 (4 ounce) skinless, boneless chicken breast halves
  • 0.5 cup all-purpose flour
  • 0.25 cup butter
  • 0.5 cup chicken broth
  • 0.125 teaspoon ground black pepper
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup shredded Parmesan cheese
  • 2 stalks green onions, chopped
Instructions:
  • Preheat your oven to 300°F (150°C).
  • Arrange bacon strips in a slightly overlapping pattern on a baking sheet. Massage brown sugar onto the bacon until fully coated.
  • Cook in the preheated oven until the bacon is crispy, approximately 30 minutes. Let it cool after taking it out of the oven.
  • Preheat your oven to 450 degrees F (230 degrees C) and lightly grease a 9x13-inch baking dish.
  • In a skillet over medium-high heat, melt 2 tablespoons of butter. Add mushrooms and cook, stirring constantly, until they are just tender, about 3 to 5 minutes. Then, remove from the heat.
  • Halve the chicken breasts lengthwise, then gently flatten them between two sheets of heavy-duty plastic wrap to a 1/8-inch thickness using a meat mallet or rolling pin. Coat the chicken with flour by dredging it in a shallow plate.
  • In a large nonstick skillet over medium heat, melt 2 tablespoons of butter. Cook the chicken in batches until golden, about 3 to 4 minutes per side, adding more butter as needed. Transfer the cooked chicken to a baking dish and reserve the pan drippings in the skillet.
  • Distribute mushrooms evenly on top of the chicken.
  • Combine chicken broth with the delicious pan drippings and bring to a boil. Simmer uncovered for 10 minutes, stirring occasionally. Season with salt and pepper, then lavish the sauce over the chicken.
  • Combine chopped bacon with creamy mozzarella, flavorful Parmesan, and fresh green onions; sprinkle mixture generously over the chicken.
  • Bake in the oven until the cheese is gooey and melted, for about 12 to 14 minutes.
