Creamy chicken bake with leek and bacon sauce, topped with cheesy crust for ultimate comfort dinner.
Ingredients:
  • 2 x 180g tubs Warming Leek & Bacon Dip
  • 150 g Made Thin Sliced Streaky Bacon, finely chopped
  • 4 (about 200g each) chicken breast fillets
  • 75g mozzarella
  • 2 spring onions, thinly sliced
  • 120g pkt Australian 4 Leaf Salad
Instructions:
  • Preheat your oven to 180°C. Grease an 8-cup (2L) ovenproof dish, then evenly spread half of the dip over the bottom of the dish.
  • In a large non-stick pan over medium-high heat, cook the bacon for 2 minutes or until browned, stirring occasionally. Place on a paper towel-lined plate. Sprinkle half of the bacon over the dip in the prepared dish.
  • Place chicken in a hot frying pan and sear for 2 minutes on each side until golden. Season the chicken, then transfer it to the dish over the bacon mixture. Spread the remaining dip over the chicken and top with mozzarella. Bake for 25 minutes, until the cheese is golden and the chicken is cooked. Let it rest for 5 minutes before serving.
  • Top the chicken mixture with fresh spring onions and the additional crispy bacon. Accompany with a bed of vibrant salad leaves.
