Cheesy chilli and lime corn

Enhance BBQ corn with zesty chili-lime seasoning.
Ingredients:
  • 20.00 ml finely grated lime rind
  • 1/2 tsp chilli powder (see notes)
  • 4 corn cobs, husks and silk removed, halved
  • 250.00 ml finely grated parmesan
Instructions:
  • In a shallow dish, mix oil, lime rind, and chili powder. Add corn and toss to coat evenly. Cover and let marinate for 30 minutes.
  • Preheat a chargrill pan or barbecue grill over medium heat. Cook the corn for 10 minutes, turning occasionally, until it's tender and nicely charred. Place the cooked corn on a serving plate, sprinkle with Parmesan, season with pepper, and serve.
