Tender roasted Mexican street corn topped with cotija cheese, cilantro, lime, and chili.
Ingredients:
  • 6 ears corn, unhusked
  • 6 tablespoons unsalted butter
  • 0.25 cup crumbled cotija cheese
  • 0.25 cup chopped fresh cilantro
  • 2 limes, juiced
  • 2 teaspoons chili powder
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • Roast corn, still in their husks, in a preheated oven until tender and cooked through, about 40-45 minutes.
  • Peel back husks and generously coat each ear of corn with 1 tablespoon of butter. Top with a sprinkle of cotija cheese, cilantro, lime juice, and chili powder for a burst of flavor.
