Indulgent and flavorful eggplant casserole, ready in no time.
Ingredients:
  • 1 eggplant, peeled and diced
  • 1.5 cups shredded Cheddar cheese
  • 1 cup dry bread stuffing mix
  • 1 clove garlic, crushed
  • 1 teaspoon dried Italian seasoning
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect cooking temperature.
  • In a medium microwave-safe dish, microwave the eggplant for 5 minutes on High, stirring once, until tender. Then, transfer the cooked eggplant to a 9x9 inch baking dish. Combine with 1/2 cup Cheddar cheese, stuffing mix, garlic, onion, and egg. Season the mixture with Italian seasoning, salt, and pepper.
  • Bake for 15 minutes in a preheated oven. Sprinkle the rest of the cheese on top and bake for an additional 15 minutes until the cheese is golden and bubbly.
