Cheesy eggplant casserole with sweet and colorful veggies.
Ingredients:
  • 1 large eggplant, peeled and diced
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 (28 ounce) can stewed tomatoes
  • 1 medium onion, chopped
  • 2 tablespoons brown sugar, or more to taste
  • 6 ounces grated sharp Cheddar cheese
  • 0.33333334326744 cup fine bread crumbs
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • - Boil a large saucepan of water. Cook eggplant until tender, for 10 to 15 minutes. Drain and transfer to an 8-inch square baking dish.
  • In a 3-quart saucepan over medium heat, melt butter. Stir in flour to form a paste. Add tomatoes, bell pepper, onion, brown sugar, and salt. Cook over medium to medium-high heat, stirring occasionally, until mixture bubbles and thickens, for about 5 to 10 minutes. Pour over the eggplant in the baking dish.
  • Sprinkle Cheddar cheese and bread crumbs over the vegetables in the baking dish.
  • Bake until golden and bubbling in the preheated oven for 30-40 minutes.
