Cheesy Baked Southern Grits - A comforting classic with a gooey twist!
Ingredients:
  • 2 cups milk
  • 2 cups water
  • 1/4 teaspoon pepper
  • 1 cup hominy quick grits
  • 1 1/2 cups shredded Cheddar cheese (6 ounces)
  • 4 medium green onions, sliced (1/4 cup)
  • 2 eggs, slightly beaten
  • 1 tablespoon butter or margarine
  • 1/4 teaspoon paprika
Instructions:
  • Preheat oven to 350°F. Grease a 1 1/2-quart casserole dish. In a 2-quart saucepan, bring milk, water, salt, and pepper to a boil. Slowly stir in grits, and simmer uncovered for about 5 minutes, stirring often, until thickened.
  • Combine cheese and onions into the mixture. Gradually stir 1 cup of the hot mixture into the eggs, then add it back to the saucepan. Transfer the mixture into a casserole dish. Top with butter and sprinkle paprika over it.
  • Bake without a cover for 35-40 minutes until firm. Allow it to rest for 10 minutes before serving.
