Cheesy grits stuffed tomatoes.
Ingredients:
  • 0.5 cup dry grits
  • 0.75 teaspoon salt
  • cooking spray
  • 1.3333330154419 cups ricotta cheese
  • 0.33333334326744 cup grated Parmesan cheese
  • 0.5 cup grated Asiago cheese
  • 2 eggs
  • 2.5 teaspoons garlic powder
  • 0.25 cup chopped fresh parsley
  • 0.25 teaspoon crushed red pepper
  • 8 tomatoes
Instructions:
  • In a small pot, mix together dry grits, 1 1/2 cups water, and 3/4 teaspoon salt. Bring to a boil, then simmer until grits are tender, about 15-20 minutes. Allow to cool.
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a baking sheet with nonstick cooking spray.
  • In a large bowl, whisk the eggs vigorously until smooth. Gently fold in the cooled grits, rich ricotta, flavorful Parmesan, and robust Asiago cheeses. Add in the garlic powder, fragrant parsley, spicy crushed red pepper, and a touch of salt. Combine thoroughly until well-incorporated.
  • Remove the tops of the tomatoes and gently scoop out the insides, keeping the outer shells about 1/4 inch thick. Fill each tomato with the grits mixture and place them on the baking sheet.
  • Bake until beautifully golden, about 30-40 minutes. Let cool a bit before enjoying.
