Simple stuffed tomatoes with pantry staples, delicious and perfect for kids.
Ingredients:
  • 8 large tomatoes
  • 36.40 gm olive oil
  • 1 onion, finely chopped
  • 2 x 185g cans tuna in olive oil, drained, flaked
  • 40.00 ml basil leaves, chopped
  • 82.50 ml raisins
  • 250.00 ml fresh white breadcrumbs
  • green salad, to serve
Instructions:
  • Preheat the oven to 200°C. Slice the tops off each tomato and keep them aside. Scoop out the tomato pulp using a small teaspoon, chop it roughly, and set aside. Season the tomato shells with salt and pepper, then arrange them in a baking dish.
  • In a sizzling frying pan, swirl oil over medium-high heat. Toss in onion, garlic, and a touch of cinnamon. Sauté for 1 minute until soft. Introduce tuna, diced tomato, fresh basil, and sweet raisins. Cook for an additional 2 minutes before transferring to a serving bowl.
  • Mix breadcrumbs into the tuna mixture, then add salt and pepper for seasoning. Fill the tomato shells with the mixture, top with the tomato tops, and bake for 18 to 20 minutes, or until the tomatoes are tender. Serve alongside a fresh green salad.
