Get creative with dinner and try these delicious tuna-stuffed tomatoes.
Ingredients:
  • 8 vine-ripened tomatoes
  • 125g light cream cheese, softened
  • 1 lemon, rind finely grated, juiced
  • 425g can tuna in oil, drained, flaked
  • 3 green onions, thinly sliced
  • 40.00 ml mint leaves, finely chopped
Instructions:
  • Preheat oven to 180C. Cut off the tops of the tomatoes and set them aside. Scoop out the flesh with a teaspoon and roughly chop it. Place the tomato shells in a greased ceramic baking dish.
  • In a bowl, combine cream cheese, lemon rind, half of the tomato flesh, 2 tablespoons of lemon juice, tuna, onions, and mint. Season with salt and pepper. Fill tomato shells with tuna mixture, then top with the tomato lids. Sprinkle with more pepper before serving.
  • Bake for 35 to 40 minutes or until the tomatoes are tender yet firm. Serve warm or at room temperature with crusty bread and salad.
