Stuffed tomatoes with zesty vinaigrette, perfect as a refreshing starter or tasty accompaniment to grilled dishes.
Ingredients:
  • 4 beefsteak tomatoes
  • 4 teaspoons olive oil
Instructions:
  • Remove the tops from the tomatoes and scoop out the insides, leaving a 1/2 to 1/4 inch thick shell. Place the tomato pulp in a large bowl.
  • Combine the vinegar and olive oil with the pulp, ensuring to mix well to break up any large pieces. Season generously with salt and pepper, then fill the tomato shells evenly with the mixture. Chill in the refrigerator for a minimum of 10 minutes before serving.
