Indulge in a stunning frittata for a cozy dinner option.
Ingredients:
  • 1/2 lb lean (at least 80%) ground beef
  • 1 2/3 cups hot water
  • 2 tablespoons butter or margarine
  • 1 box Hamburger Helper™ cheesy hashbrowns
  • 1 medium red, orange or green bell pepper, seeded and chopped (about 1 cup)
  • 8 eggs, lightly beaten
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • Additional salt and ground black pepper
Instructions:
  • Preheat oven to 375°F. Brown beef in a 10-inch nonstick skillet over medium-high heat. Drain any excess fat. Add hot water, butter, potatoes (from Hamburger Helper box), and bell pepper. Bring to a boil over high heat, stirring constantly until butter is melted.
  • Lower the heat to medium and use the back of a spatula to evenly press down the potato mixture in the pan. Let it cook for 6 minutes without stirring until all the liquid is fully absorbed.
  • Whisk eggs and 1/2 teaspoon salt until thoroughly mixed. Pour over the potatoes in the skillet, stirring gently to mix evenly. Cook for 4 to 5 minutes, lifting the edges with a spatula to allow the uncooked egg to flow to the bottom. Once the bottom is set and most of the egg is cooked, transfer the skillet to the oven.
  • Bake for 8 to 10 minutes until the eggs are perfectly cooked through.
  • Combine milk and topping mix from the Hamburger Helper box in a medium bowl. Cut the frittata into wedges, then generously drizzle with the topping mixture. Season to taste with salt and ground black pepper.
