Cheesy meatballs in vegetable sauce

Cheesy veggie-packed meatballs in flavorful sauce for a family-pleasing, healthy meal!
Ingredients:
  • 500g lean beef mince
  • 1 green onion, finely chopped
  • 40.00 ml finely chopped fresh basil
  • 1 egg, lightly beaten
  • 100g piece tasty cheese, cut into 1cm cubes
  • 2 stalks celery, trimmed, finely chopped
  • 1 medium carrot, grated
  • 1 medium zucchini, grated
  • 500g roma tomatoes, finely chopped
  • 69.38 gm salt-reduced tomato paste
  • 2 beef style stock cubes
  • Cooked spaghetti, to serve
Instructions:
  • Mix together ground beef, diced onion, fresh basil, egg, and breadcrumbs in a bowl. Season with salt and pepper. Flatten a tablespoon of the mixture into a round shape. Put a cube of cheese in the center of the round. Mold the mixture around the cheese to create a ball. Repeat with the remaining mixture and cheese.
  • In a sizzling frying pan with 1 tablespoon of oil, sear the meatballs in batches, flipping occasionally, for 3 to 4 minutes until golden brown. Transfer to a plate and cover tightly with foil.
  • In a pan, heat the rest of the oil. Add celery, carrot, and zucchini. Cook for 5 minutes until celery begins to soften. Stir in tomato and cook for an additional 2 minutes. Add tomato paste, crumbled stock cubes, and 1 cup of cold water. Bring to a boil, then reduce heat and simmer covered for 30 minutes until the sauce thickens.
  • Place the meatballs back in the pan, cover, and simmer for 5 to 7 minutes until fully cooked. Serve the delicious meatballs and sauce with spaghetti.
