Savory Italian wedding soup made in the Instant Pot with flavorful meatballs, pasta, vegetables, and cheese for a delicious, hearty dish.
Ingredients:
  • 1.5 cups chopped carrots
  • 1 cup sliced celery
  • 0.5 cup diced red onion
  • 0.25 teaspoon dried basil
  • 6 cups no-salt-added chicken broth
  • 20 Italian meatballs, preferably home made
  • 0.5 cup pastina pasta
  • 6 ounces baby spinach
  • salt to taste
  • 4 teaspoons grated Parmesan cheese
Instructions:
  • Prepare to embark on a culinary journey by gathering all the fresh and vibrant ingredients required for this recipe.
  • Preheat a multi-functional pressure cooker (such as Instant Pot) using the Sauté function. Add olive oil and heat until sizzling. Sauté carrots, celery, and onion until tender, around 4 to 5 minutes.
  • Sprinkle with fresh parsley, fragrant basil, and a pinch of pepper. Add in savory chicken broth and place the delicious meatballs. Seal the lid securely and switch the valve to the closed position. Choose the Soup function following the manufacturer's directions, then set the timer for 3 minutes. Wait patiently for 10 to 15 minutes for the pressure to build up.
  • Carefully release pressure using the quick-release method as per manufacturer's instructions for about 5 minutes. Unlock and remove the lid, then stir in pasta. Replace the lid, close the valve, and choose the Soup function following manufacturer's guidelines; set the timer for 3 minutes. Allow 10 to 15 minutes for pressure to build before serving.
  • Carefully release pressure following manufacturer's instructions for about 5 minutes. Remove the lid and stir in the spinach. Allow the soup to rest until the spinach is wilted and the pasta is fully cooked, approximately 5 minutes. Season with salt to taste.
  • Serve the warm soup in bowls, then generously sprinkle with fragrant Parmesan cheese on top.
