Instant Pot Vegetarian Minestrone: Hearty, delicious, and easy weeknight meal.
Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 packet Italian dressing and seasoning mix
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.125 teaspoon celery seed
  • 3 tomatoes, diced
  • 3 carrots, chopped
  • 1 zucchini, chopped
  • 1 (32 fluid ounce) container vegetable broth
  • 1 cup uncooked elbow macaroni
  • 1 (15.5 ounce) can white beans, drained
  • 1 (15.25 ounce) can corn, undrained
  • 1 (5 ounce) package spinach, chopped
  • 1 tablespoon grated Parmesan cheese, or to taste
Instructions:
  • Preheat Instant Pot to Saute function and drizzle with olive oil. Saute onion and garlic until translucent, around 3 minutes. Stir in Italian dressing mix, oregano, basil, and celery seed, cooking until fragrant, about 2 minutes.
  • Place tomatoes, carrots, and zucchini in the pot, stirring gently to coat them. Pour in broth and add macaroni, beans, and corn. Stir to ensure the macaroni is submerged in the broth. Cancel the current setting, then select the Soup setting and set the timer for 15 minutes. Allow 10 minutes for pressure to build.
  • Follow the manufacturer's instructions to naturally release pressure for 5 minutes. Then, carefully quick-release any remaining pressure for about 5 minutes. Unlock and remove the lid.
  • Mix in fresh chopped spinach and sprinkle Parmesan cheese generously into each serving bowl to your liking.
