Instant Pot Italian Turkey Sausage Minestrone: A healthy, quick, and delicious meal with veggies and cannellini beans.
Ingredients:
  • 0.5 pound Italian turkey sausage links, casings removed
  • 2 cups water
  • 2 teaspoons chicken soup base (such as Better than Bouillon®)
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 zucchini, sliced into half moons
  • 1 medium yellow onion, diced
  • 2 carrots, peeled and coarsely diced
  • 1 bunch fresh spinach, chopped
  • 0.5 teaspoon dried Italian herbs
  • 0.25 teaspoon dried rosemary
  • 0.5 cup freshly grated Parmesan cheese
Instructions:
  • Preheat a multi-functional pressure cooker like an Instant Pot using the Saute function. Cook sausage, breaking it into pieces with a wooden spoon, until browned, approximately 5 minutes. Add water, chicken soup base, beans, zucchini, onion, carrots, and garlic. Stir gently.
  • Secure the lid tightly, set to high pressure following the manufacturer's guidelines, and program the timer for 3 minutes. Let the pressure build for 10 to 15 minutes.
  • Carefully release pressure using the quick-release method as per manufacturer's instructions for about 5 minutes. Unlock and remove the lid, then stir in spinach, Italian herbs, and rosemary until spinach wilts. Serve the minestrone in bowls and sprinkle with freshly grated Parmesan cheese on top.
