Cheesy Mexican tostada bites

Mexican-inspired canapé ready in just 25 minutes - easy and delicious finger food.
Ingredients:
  • 435g can refried beans
  • 1 green shallot, finely chopped
  • 42.00 gm fresh lime juice, plus wedges, to serve
  • 200g packet round tortilla corn chips
  • 160g (2 cups) finely grated cheddar
  • 1 small avocado, cut into small pieces
  • 12 cherry tomatoes, quartered
  • 235g (1 cup) sour cream
  • Fresh baby coriander leaves, to serve
Instructions:
  • Preheat your oven to 200C/180C fan forced, and prepare 3 baking trays by lining them with baking paper.
  • In a medium bowl, combine the beans, shallot, and lime juice. Season to taste. Spread 48 corn chips on prepared trays. Sprinkle half of the cheese on top. Spoon the bean mixture over the chips. Bake for 10 minutes, or until the cheese is melted.
  • Sprinkle the rest of the cheese over the chips, and then add the avocado, tomato, sour cream, and fresh coriander on top.
