Impress guests with cheesy chicken tostadas topped with chipotle cream cheese and quick tomato lime salsa.
Ingredients:
  • 4 (6 inch) corn tortillas
  • cooking spray
  • 1 small tomato, chopped
  • 2 green onions, sliced
  • 1.5 tablespoons lime juice
  • 1 tablespoon chopped fresh cilantro
  • 0.5 (8 ounce) package cream cheese, softened
  • 1 tablespoon finely chopped chipotle pepper in adobo sauce
  • 1.5 cups shredded cooked chicken
  • 0.75 cup shredded Mexican cheese blend
  • 0.33333334326744 cup sliced black olives
  • 0.25 cup sour cream
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C). Coat both sides of the tortillas with cooking spray and lay them out on a baking sheet.
  • Bake tortillas in the preheated oven until golden and crispy, about 6 to 8 minutes.
  • Mix together diced tomato, chopped green onions, fresh lime juice, and chopped cilantro in a bowl; leave it aside.
  • In a separate bowl, blend cream cheese and chipotle pepper until smooth. Remove tortillas from the oven, then spread the cream cheese mixture over them and top with chicken and cheese.
  • Bake tortillas until cheese is perfectly melted for about 5 minutes. Add the delightful tomato mixture, olives, and a dollop of sour cream on top.
