Cheesy peas and corn rice bake

Cheesy rice bake - perfect for lunch or picnic!
Ingredients:
  • 250g pkt 90-second microwave long grain rice (1 ½ cups)
  • 5 eggs
  • 500.00 ml Frozen Peas & Super Juicy Corn
  • 250.00 ml grated pizza cheese
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Lightly grease and line a 20cm square cake pan with baking paper.
  • Open the packet of rice. In a large bowl, whisk together eggs and garlic. Add the rice, McCain Frozen Peas & Super Juicy Corn, and half of the cheese. Mix well to combine. Season to taste.
  • Transfer the mixture into the pan and press it down. Sprinkle the remaining cheese on top. Bake for 30-35 minutes until golden and set. Let it cool in the pan for 10 minutes before serving.
