Cheesy Mornay with peas and corn: A one-dish delight for a quick and comforting dinner.
Ingredients:
  • 0.5 cup uncooked rotini pasta
  • 1 tablespoon butter or margarine
  • 1.5 cups milk
  • 2 cups shredded Cheddar cheese
  • 1 cup frozen green peas
  • 1 cup frozen corn kernels
  • 2 (7 ounce) cans tuna, drained
  • salt
  • 0.5 cup bread crumbs
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while bringing a pot of lightly salted water to a boil. Cook the pasta in the boiling water until tender, approximately 8 minutes. Drain the pasta before proceeding.
  • As the butter melts in a small saucepan over medium heat, whisk in flour until smooth. Slowly pour in milk to avoid any lumps. Stir consistently until the mixture comes to a boil, then fold in half of the cheese. Combine peas, corn, and macaroni. Drain the tuna, reserving a bit of liquid for moisture. Flake the tuna with a fork and fold it into the cheese mixture. Transfer everything to a casserole dish and sprinkle the remaining cheese on top, followed by breadcrumbs before baking.
  • Bake in a preheated oven for 20 minutes until the sauce bubbles and the cheese is golden brown.
