Cheesy Pierogi Casserole

Kluski noodle casserole with bacon, onion, cabbage, and two cheeses - a twist on classic pierogi.
Ingredients:
  • 0.5 pound bacon
  • 1 (8 ounce) package kluski noodles
  • 0.75 cup chopped onion
  • 4 cups shredded cabbage
  • 1 (12 ounce) container cottage cheese
  • 10 ounces Muenster cheese, cubed
  • 0.25 teaspoon dried dill weed
  • salt to taste
  • 2 tablespoons butter
  • 0.5 cup bread crumbs
  • 0.25 teaspoon paprika, or to taste
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • Cook bacon in a large skillet over medium-high heat, flipping occasionally until crispy, about 10 minutes.
  • While waiting, fill a large pot with lightly salted water and bring to a vigorous boil. Boil kluski until almost tender, approximately 7 minutes. Drain well.
  • Place the crispy bacon on paper towels to drain excess grease. Toss the onion into the savory bacon drippings in the skillet. Sauté and stir over medium heat until tender, approximately 5 minutes. Introduce the cabbage; lower the heat and let it gently simmer for 15 minutes.
  • Combine cottage cheese, Muenster cheese, dill, and salt with noodles. Mix in bacon, onion, and cabbage until fully combined. Transfer mixture into a 3-quart baking dish.
  • Heat butter in a skillet until melted, then stir in bread crumbs until coated. Sprinkle the breadcrumb mixture over the noodle mixture and finish with a sprinkle of paprika.
  • Bake in the oven until the top is golden brown and the dish is heated through, for about 25 to 35 minutes.
