Ham and Cheddar Pierogi Bake

Transform frozen pierogi into a mouthwatering casserole with ham and creamy onion-cheese sauce for a simple yet impressive weeknight dinner.
Ingredients:
  • 2 tablespoons butter
  • 1 cup diced onions
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 3/4 cup Progresso™ reduced sodium chicken broth (from 32-oz carton)
  • 3/4 cup milk
  • 1 1/2 cups shredded Cheddar cheese (6 oz)
  • 1 package (16 oz) frozen potato and Cheddar pierogies
  • 1 tablespoon water
  • 1 cup cubed ham (6 oz)
  • 2 tablespoons thinly sliced green onions
Instructions:
  • Preheat the oven to 350°F and generously coat an 8-inch square (2-quart) glass baking dish with cooking spray.
  • In a 3-quart saucepan, melt butter over medium heat. Add onions and cook for 3 to 4 minutes, stirring occasionally until they start to soften. Whisk in flour until smooth and cook for 1 to 2 minutes until mixture is bubbly.
  • Combine broth and milk in a 2-cup glass measuring cup. Gradually stir the mixture into a saucepan over medium-high heat until boiling, stirring constantly. Boil and stir for 1 minute, then lower heat to medium. Add 1 cup of Cheddar cheese and stir until melted. Remove from heat when fully melted, stirring occasionally.
  • Place your frozen pierogies and water in a baking dish, cover with plastic wrap, and microwave on High for 2 minutes. Stir and continue microwaving for 1 1/2 to 2 minutes until thawed. Pour the cheese sauce over the pierogies and top with ham and the remaining 1/2 cup of cheese.
  • Bake for 20-25 minutes, until the cheese is melted and the edges are bubbly. Allow it to rest for 10 minutes before garnishing with green onions.
