Elevate your French dinner with a quick and cheesy polenta and ham casserole in 45 minutes!
Ingredients:
  • 1 tablespoon butter
  • 1/4 cup finely chopped onion
  • 1 oz. (1/4 cup) shredded fresh Parmesan cheese
  • 1 (1-lb.) pkg. prepared polenta, cut into 1/2-inch slices
  • 1 cup cooked ham strips (2x1/4x1/4-inch)
  • 4 oz. (1 cup) shredded Swiss cheese
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Preheat the oven to 425°F. Grease an 8-inch square (2-quart) glass baking dish with nonstick cooking spray. In a small saucepan over medium-high heat, melt butter. Sauté onion for 2 to 3 minutes until softened but not browned, stirring frequently.
  • Stir in whipping cream and Parmesan cheese until well combined. Bring mixture to a boil, then simmer over medium heat for 2 to 4 minutes until slightly thickened, stirring occasionally.
  • Layer polenta slices in a sprayed baking dish. Add ham and Swiss cheese on top. Pour sauce over everything.
  • Bake at 425°F for 20-25 minutes until the sauce is bubbly and the cheese is lightly browned. Garnish with parsley.
