Cheesy pumpkin puffs

Cheesy puff muffins, quick and kid-friendly lunchbox treat.
Ingredients:
  • 520g (2 cups) mashed cooked pumpkin
  • 80g (1 cup) grated cheddar
  • 2 eggs, lightly whisked
  • 150g (1 cup) self-raising flour
  • 62.50 ml chopped fresh chives, plus extra, to serve (optional)
Instructions:
  • Preheat the oven to 180C/160C fan forced and lightly grease twelve 80ml (1/3 cup) muffin pans.
  • Combine all the ingredients in a large bowl and season. Gently fold with a spatula until well mixed. Scoop mixture into the prepared muffin pans.
  • Bake until golden and puffed, about 25 minutes. Allow to cool in the pans for 5 minutes before gently removing the muffins with a knife. Serve warm or at room temperature, garnished with extra chopped chives, if desired.
