Ingredients:
  • 800g butternut pumpkin, seeded, peeled, thinly sliced
  • Olive oil spray
  • 1 1/2 sheets (25cm) ready-rolled frozen butter puff pastry
  • 1 bunch rocket
  • 125g goat's cheese, crumbled
  • 45g pine nut
  • 40.00 ml balsamic glaze
Instructions:
  • Preheat your oven to 200°C. Line an oven tray with baking paper and arrange the pumpkin in a single layer. Drizzle with olive oil and season with salt and pepper. Bake for 30 minutes, or until golden and tender.
  • Cut the puff pastry into 12 rectangles and arrange them on 2 baking trays. Bake in the oven, switching the trays halfway through, until they are puffed and golden, about 10-12 minutes.
  • On individual serving plates, layer a pastry rectangle with pumpkin, rocket, and goat's cheese, then sprinkle with pine nuts. Add another pastry rectangle on top, drizzle with balsamic glaze, and serve promptly.
