Cheesy Christmas cookies for a festive touch to your table!
Ingredients:
  • 375.00 ml plain flour
  • 2.00 gm baking powder
  • 125g unsalted butter, chilled, chopped
  • 1/2 tsp lemon rind, finely grated
  • salt and pepper
  • 175g parmesan, finely grated
  • 1 egg yolk, lightly beaten
  • milk, for brushing
  • sesame seeds
Instructions:
  • Preheat the oven to 170°C. Line a baking tray with non-stick baking paper. Combine flour, baking powder, butter, lemon rind, salt, pepper, and parmesan in a food processor. Pulse until it resembles coarse breadcrumbs. Add the egg yolk and pulse until a dough ball forms. Shape the dough, wrap it in plastic, and chill for 30 minutes.
  • Take the dough out of the fridge and roll it out to a 5mm thickness on a lightly floured surface. Use a small Christmas tree cutter to create shapes. Transfer the cookies onto a lined tray, brush them with a bit of milk, sprinkle sesame seeds on top, and bake until golden (15-20 minutes). Let them cool on a wire rack before serving warm or at room temperature.
