Indulge in homemade German egg pasta, spaetzle, perfect for a cozy meal or as a side for stew. Ready in just 20 minutes!
Ingredients:
  • 300g (2 cups) plain flour
  • 2.40 gm table salt
  • 3 eggs, lightly whisked
  • 250ml (1 cup) milk
  • 60g butter
  • 70g (2⁄3 cup) coarsely grated gruyère or cheddar
  • 40.00 ml chopped fresh continental parsley leaves
Instructions:
  • Bring a large saucepan of salted water to a boil, then simmer over medium heat.
  • In a large bowl, sift together the flour and salt, then create a well in the center. In a separate jug, whisk the egg and milk together. Pour the egg and milk mixture into the flour, stirring until thoroughly combined.
  • 1. Grease a large baking tray with oil. 2. Strain 1 cup of the mixture through a colander into the simmering water. Cook until spaetzle rises to the top, then cook for an additional 30 seconds. 3. Use a slotted spoon to transfer spaetzle to the prepared tray. 4. Repeat with the remaining mixture, adding 1 cup at a time.
  • In a large frying pan over medium heat, melt the butter. Add the spaetzle, toss gently to coat, then stir in the cheese and parsley. Season with pepper and toss until well combined. Serve immediately.
