Revamp cauliflower with cheesy Colby-Jack filling for a crowd-pleasing side dish. Dip in egg, coat with bread crumbs, and bake to perfection.
Ingredients:
  • 1 head cauliflower
  • 1 egg, beaten
  • 0.5 cup plain bread crumbs
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 1 pound shredded Colby-Jack cheese
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Carefully remove the cauliflower stem with a knife, creating a bowl-like shape. Dip the cauliflower into the beaten egg, then coat the outside with breadcrumbs, ensuring to leave the center empty where the stem was. Transfer the cauliflower to a deep oven-safe baking dish.
  • Combine chili powder, cumin, onion powder, and garlic powder in a small bowl.
  • Fill the hollow space of the cauliflower with Colby-Jack cheese. Evenly sprinkle the seasoning mix over the cheese and cauliflower.
  • Roast in the preheated oven until cauliflower is tender, approximately 1 hour.
