Sautéed zucchini and summer squash with colorful bell peppers, tomatoes, onions, garlic, and fragrant basil, topped with gooey melted cheddar cheese.
Ingredients:
  • 2 pounds summer squash and/or zucchini, sliced
  • 1 green bell pepper, seeds removed, sliced
  • 2 smallish tomatoes or one large tomato, peeled and cut into wedges
  • 1/2 yellow onion, peeled and sliced
  • 1 clove of garlic, chopped
  • Extra virgin olive oil
  • 5 or 6 slices of cheese - jack or cheddar
  • Basil, either dry or chopped fresh
  • Salt and pepper
Instructions:
  • Heat olive oil in a large saucepan over high heat. Add onion, garlic, squash, and bell pepper. Sauté until slightly browned to enhance flavor, sprinkling with dried or fresh basil while cooking.
  • When the vegetables are perfectly caramelized, take the pan off the heat, layer on the cheese slices, and let the pan cover do its magic.
  • Saute the tomatoes in a non-stick pan over medium-high heat for 5 minutes, stirring occasionally until the juices begin to evaporate.
  • After simmering for 5 minutes, incorporate the tomatoes into the vegetable mixture and gently mix in. Season with salt and pepper to your liking.
