Simple Summer Squash Soup

Cheesy butternut squash soup - velvety puree with a hint of summer.
Ingredients:
  • 1 (1 pound) butternut squash, peeled and cubed
  • 0.25 cup water
  • 0.75 cup whole milk
  • 0.5 cup shredded Cheddar cheese, or more to taste
  • 2 tablespoons sour cream, or to taste
  • 2 tablespoons chopped fresh cilantro, or to taste
Instructions:
  • Place a steamer insert in a saucepan and fill with water just below the bottom of the steamer. Bring to a boil, add butternut squash, cover, and steam until tender, approximately 15 minutes.
  • Puree squash and water until velvety in texture. Incorporate milk and Cheddar cheese into the mixture and continue blending until creamy. Season the soup with a pinch of salt and a sprinkle of pepper.
  • Serve the soup in bowls and garnish with a dollop of sour cream and fresh cilantro.
